Candy Corn Mug Cake

IMG_5253Today’s recipe is the same as today’s blog: short and sweet. The plague of various illnesses that has inevitably traveled around the ballet studio for the past month has finally taken hold of me. That is why, from my NyQuil and tissue-laden apartment,  I present to you the humble mug cake this week. All you need is a few minutes and a hankering for something sweet to pull this together; even better, you don’t have to share the finished product! It’s perfect for all occasions but especially great for sick days.

Of course the week that I’m mostly confined to my bed is the week of Halloween. It was with great reluctance that I gave up the fantastical possibilities of ghost, witch, zombie, and mummy-themed desserts. It only took three times of forgetting ingredients in a recipe and losing a container of pumpkin spice in my own kitchen to make me realize my mind was just a little too fuzzy to create an elaborate Halloween recipe (I have yet to find the spice). I guess I’ll have no choice but to save the cute, edible monsters for next October. Despite this fact, I couldn’t bear to neglect the holiday altogether! I needed something that effortlessly screamed Halloween; hence, the candy corn.

I know that these sugary, sun-toned bites rarely see middle ground; they’re most often deeply loved or absolutely detested. Clearly I fall on the side of the candy corn fans. I will forever remember the excitement I felt each year when my grandma brought out a bowl of candy corn (and those pumpkin ones too, if I was lucky). The bowl would be waiting for me each time I visited her house, there to stay until the turkey and leaf decorations were replaced by snowmen and garland.

Whatever your stance is on them, I encourage you to try this miniature bake! The cake isn’t very sweet, so when it’s paired with the sugar-loaded candy corn, the flavors balance perfectly. And it takes less than five minutes, so even sickies like me can reap the benefits. It’s back to the blankets and hot tea for me, then..Happy Halloween, everyone!

Come to me, all you who are weary and burdened, and I will give you rest. Take my yoke upon you and learn from me, for I am gentle and humble in heart, and you will find rest for your souls. For my yoke is easy and my burden is light.
